Meat tenderizer contains bromelain, an enzyme that breaks down meat tissue. Makes about 1 1/2 cup // To make chewy jerky (the kind most of us like) slice the meat along the grain. For more tender jerky, slice across the grain. For best results, meat should be cut no more than ¼-inch thick. Strips should also be about 1 inch to 1½ inches wide. The more even the thickness of your slices, the more even the drying time will be.
