Instructions
Step 1
Dry and heavily season chicken thighs
Step 2
Heat pan and add oil
Step 3
Cook chicken until cooked through, remove from pan and let sit for 10 minutes
Step 4
Dice vegetables and add to chicken juices. Cook for a few minutes. Add butter and seasonings to vegetables.
Step 5
Add rice and broth and cook until liquid is evaporated but rice is still wet. Add additional broth as needed until rice is soft
Step 6
Optional: Cook chicken separately in butter and garlic then add to rice once coated
