Instructions

Step 1
Begin by making the shortcrust pastry. In a food processor, combine the flour, sugar, and salt. Add the cold butter and pulse until the mixture resembles coarse breadcrumbs. Add the egg yolk and pulse until the dough comes together.

Press the dough into the bottom and up the sides of a 9-inch tart pan. Refrigerate for at least 30 minutes.

Preheat your oven to 375°F (190°C). Prick the bottom of the tart shell with a fork, line it with parchment paper, and fill it with pie weights or dried beans. Bake for 15 minutes.

Carefully remove the weights and parchment, and bake for another 10 minutes or until golden. Let cool.

While the tart shell is cooling, prepare the custard filling. In a saucepan, heat the milk until it just begins to simmer.

In a separate bowl, whisk together the egg yolks, sugar, cornstarch, and vanilla. Gradually whisk in the hot milk, then return the mixture to the saucepan.

Cook over medium heat, whisking constantly, until the mixture thickens and comes to a boil. Continue to cook for another 2 minutes, then remove from heat.

Pour the custard into the cooled tart shell and smooth the top with a spatula. Allow to cool to room temperature, then refrigerate until set, about 2 hours.

Once the tart is chilled, arrange the strawberries on top. Heat the apricot jam in the microwave until it becomes liquid, then brush it over the strawberries for a shiny glaze.

Refrigerate the tart for another hour before serving to allow the glaze to set.
