Instructions

Step 1
Cream the butter and sugar.
Step 2
Add the egg, vanilla, coconut, and bananas and stir until well mixed.
Step 3
Add in the baking powder, oats, flour, and chocolate chips. Mix until just combined.
Step 4
Preheat the oven to 350f.
Step 5
Use a medium cookie scoop for ~1.5tbsp servings, and bake for 10 to 12 minutes.
Step 6
Leave the cookies on the hot baking tray for 3 minutes then transfer to a wire cooling rack.
