Instructions
Step 1
Chop the garlic and fry gently in olive oil with either some chopped basil stalks or a good pinch of dried oregano and a whole fresh chilli (pierce it once so it doesn't explode when frying)
Step 2
Add 2 tins of plum tomatoes, leaving the tomatoes whole
Step 3
Lightly season with salt and pepper and gently simmer for 30m
Step 4
Remove the chilli
Step 5
Break and mush the tomatoes with a soon. Season carefully with more salt and pepper and add a tiny swig of red wine vinegar.
Step 6
For pasta sauce: Add a big handful of torn fresh basil and a nice swig of balsamic vinegar, a good knob of butter and a handful of grated parmesan.
