Step 1
Add the 2 1/2 cups of diced peaches, 2 tbsp of lemon zest, 1/2 cup of sugar, 1/4 tsp of salt, and 1 cup of water to a large saucepan.
Step 2
Bring it to a boil over medium-high heat, then reduce the heat to medium-low and simmer for 10-15 minutes, or until the peaches get mushy. Once the peaches are mushy, I like to crush them against the side of the pot with a large spoon to get as much of the juice out as possible.
Step 3
Let the mixture cool for 15-20 minutes, then strain the syrup into a bowl using a fine-mesh sieve. You should have approximately 1/2 - 3/4 cup of syrup.
Step 4
Juice the lemons until you have about 1 cup of juice. I like to use a stand mixer with the flat beater attachment for this as it easily extracts not only the juice but the lemon oils as well. You could use any other means to juice it as well and it will still be fine.
Step 5
Add the ice, syrup, lemon juice, 3-4 cups of water, and any additional ingredients to a pitcher and stir until well combined.
