Step 1
Heat oil in skillet. On low-med heat, cook sauté spinach. Set aside. Add more oil and sauté bread cubes with almonds. Fry until crispy. Add garlic, cumin, cayenne and pepper. Sauté.
Step 2
Transfer bread and almond mixture to food processor and add vinegar. Blend until pasty consistency (but not gooey).
Step 3
Return mixture to skillet. Add chickpeas, tomato paste and a little water. Add spinach back to pan. Season with salt and pepper and drizzle with olive oil and paprika!
