Ingredients

1chicken breast
smoked or cooked large, sliced
1little gem lettuce
halved and sliced
8cherry tomatoes
halved
4streaky bacon slices
I used smoked
1 Tbsplight mayo
1 tspDijon mustard
2anchovies
finely chopped
1garlic clove
peeled and roughly chopped
1 Tbspolive oil
0.5juice of lemon
1 Tbspparmesan cheese
finely grated
sea salt
Instructions
Step 1
Heat the air fryer to 2oo degrees. Add the bacon slices and cook for 7 minutes or until nice and crispy shaking half way. A good tip is not to let the slices touch each other.
Step 2
While the bacon is cooking. In a food processor add all of the dressing except for the parmesan and blitz until smooth. If the dressing is slightly too thick just add a splash of water. Stir in the parmesan and set aside
Step 3
In a bowl add the chopped lettuce and tomatoes. Pour over the dressing and give it a good toss so everything is coated.
Step 4
Share the dressed salad between two bowls. Add the sliced chicken and finish by roughly crumbling over the bacon. Enjoy 😊
