12Pineapple Rings
fresh or canned
4Salmon Fillets pieces
patted dry with paper towel
kosher salt
freshly ground black pepper
3 tablespoonsButter
melted
3 tablespoonsSweet chili sauce
2 tablespoonsCilantro
freshly chopped
3 clovesGarlic
minced
2 teaspoonsGinger
freshly grated
2 teaspoonsToasted sesame oil
½ teaspoonCrushed red pepper flakes

Toasted sesame seeds

Green onions
for topping thinly sliced

Instructions
Step 1
1. Preheat oven to 350 F. Line a large rimmed baking sheet with aluminum foil and grease with cooking spray. Create 4 rows of pineapple, with 3 slices in each row. 2. Season both sides of Salmon fillets with salt and pepper. Place one piece of salmon on top of each row of pineapple. 3. In a small bowl, whisk together butter, chili sauce, cilantro, garlic, ginger, sesame oil, and red pepper flakes, if using. Pour a little bit of sauce over each piece of salmon. 4. Bake until salmon is opaque and easily flakes with a fork, about 20 min. 5. Grab an adult for help, and switch the oven to broil. Broil for 2 min. , or until fish looks sticky and slightly charred in spots. 6. Top with sesame seeds and green onions and serve with lime wedges.
