Instructions
Step 1
In a large pot, melt the butter over medium heat. Add the diced onions and minced garlic. Saute until the onions are translucent.



Step 2
Sprinkle the flour over the sautéed vegetables. Stir well to combine and cook for 1-2 minutes to remove the raw taste of the flour.

Step 3
Stir in the garlic powder, salt, ground mustard, and black pepper. Mix until well combined.




Step 4
Gradually pour in the chicken broth, stirring continuously to avoid lumps. Add the chopped broccoli and shredded carrots. Bring the mixture to a simmer and cook until the vegetables are tender (about 15 mins).

Step 5
Pour in the half and half, stirring to combine. Let the soup simmer for a few more minutes.

Step 6
Turn off the heat and gradually add the shredded cheddar cheese, stirring until fully melted and incorporated into the soup.

Step 7
Season the soup with nutmeg. Start with 1/4 teaspoon, taste, and adjust according to your preference.

Step 8
If you find that your soup is too thick, add more chicken broth or half and half. Ladle the soup into bowls and garnish with additional shredded cheddar cheese.
