Instructions

Step 1
Drain tuna, chop pickles and eggs. Mix tuna, cottage cheese, greek yogurt, 1 tbsp dijon mustard, eggs, and pickles. Season with salt and pepper to taste. For each sandwich use two slices of bread and layer on 1 tbsp dijon mustard, 15 g baby spinach (enough to cover the slice of bread), 7 slices cucumber, and 1/3 tuna salad mixture. Serve with a handful of grapes.
