Step 1
Preheat oven 400 degrees
Step 2
Slice apples, chop thyme, almonds and onion.
Step 3
Sauté onion and apples in oil or butter, 4-5 min or until onions are brown.
Step 4
Reduce heat and add thyme and white balsamic vinegar
Step 5
Remove from heat and add 1 tbsp butter and apricot jam.
Step 6
Cut ciabatta’ into slices (2 per serving) and toss in oven 5 min. Spread with Dijon mustard.
Step 7
Top Bread slices with onion and apple mixture and top then both kinds of cheese. Sprinkle with salt and pepper. Broil on low for 5min, close sandwiches and serve.
