Step 1
Peel the potatoes if desired. Cut the potatoes into 2-inch lengths.
Step 2
Place the potatoes in a pan of salted water. Bring to a simmer and par cook the potatoes for approximately 5 minutes. They should be raw in the middle.
Step 3
Remove the potatoes from the water and spread evenly in a shallow baking pan so that the steam is released and the potatoes dry completely.
Step 4
Add vegetable oil to a bowl and add the potatoes and mix well.
Step 5
Place the potatoes back on the baking dish and a rack. Place in oven at 350 degrees for 35 minutes until tender.
