Instructions
Step 1
- Pre heat your oven to 400 F.
Step 2
- Peel and dice your potatoes. Place in a large pot with just enough water to cover your potatoes. Add a tbsp of salt and your chicken stock powder.
Step 3
- Cook just until a fork is easily inserted and the potatoes slide off easily.
Step 4
- Drain and add butter, salt, egg and cream cheese. Mash together until smooth adding a splash of milk here and there to bring it together. ( you may not need all of the milk depending on how many potatoes you have and there size) Do not over mash or you will get gummy potatoes.
Step 5
- Bake covered for 20 to 30 min at 400 F. ( if want a crispy top, remove the lid for the last 10 minutes)
Step 6
- They will become light, creamy and fluffy in the oven.

- Enjoy!

- Simmer some fresh minced garlic in butter for garlic mashed potatoes.
Step 9
- Top the potatoes with a sprinkle of cheese... because cheese goes on everything so why not potatoes.
