Instructions
Step 1
Mix arugula, cooked couscous, cucumber, tomatoes, and red onion together.
Step 2
You can either use store-bought balsamic vinaigrette or if following recipe above, simply add dressing ingredients to a small bowl or jar and mix/shake to combine (taste and adjust seasonings accordingly)
Step 3
Top with grilled chicken, crumbled feta, pomegranate arils, & balsamic vinaigrette
