Chili Oil Feta Fried Eggs

Here I paired my eggs with some leftover roasted sweet potato, which is packed with fiber, good carbs, and vitamin A. You can easily put these eggs on a slice of sourdough as well or pair with avocado slices to top it off!

Instructions

Step 1
Simply heat a splash of chilli oil or chilli crisp (I used store bought, but you can just as easily make your own)
Step 2
If you’d like, throw in sliced green onion and sesame seeds.
Step 3
Crack open two eggs over chili crisp mixture. Once the eggs begin to cook, crumble the feta over top.
Step 4
Let eggs cook until desired consistency, then take off heat and serve immediately.
