Instructions

Step 1
Rinse the quinoa under running water to remove excess starch. You know it’s ready when the water begins to run clear. In a small pot, add the rinsed quinoa and water with a pinch of salt and cook for roughly 20 minutes (stirring and checking it regularly) or until the quinoa has soaked up all the water and is cooked through. Set aside and allow to cool slightly.
Step 2
Prepare those veggies! Chop the brown onion, finely chop the garlic, and grate the carrots. Prepare all of the remaining ingredients, except the halloumi, and mix everything together in a bowl. Ensure the quinoa isn’t too hot so the egg does not begin to cook. If the consistency is too thick, add a little water, a tablespoon at a time.
Step 3
Make your fritters one at a time. Heat up a large pan with your chosen cooking oil, and scoop out the mixture roughly a tablespoon at a time. Cook on one side until golden, flip, and then cook the other side.
Step 4
Meanwhile slice halloumi and cook with olive oil over a medium heat for 3-4 minutes, flipping half way.Serve with salad, roasted vegetables and, if you like, a sauce like guacamole, pesto or homemade mayonnaise or aioli!
