250gplain flour

150gsugar
caster sugar, brown sugar or a mix of them both

1 teaspoonbicarbonate of soda
from school

½ teaspoonsalt
from school

3bananas
very ripe, darkly specked

120mlyogurt
Normally plain, Greek yogurt

2eggs

60mloil
Sunflower or vegetable is best

2 capsvanilla extract

100gchocolate chips
or dried fruit, optional
Instructions
Step 1
Preheat the oven to 190’C. Prepare your tin (if you are making muffins, add cases to every hole, if making a large cake, line with greaseproof paper)
Step 2
Peel your bananas. Put in a small bowl. Squash with a fork until soft and mushy
Step 3
In a large bowl, add all your ingredients including your banana.
Step 4
Stir with a large spoon until thoroughly mixed
Step 5
Transfer to your tin/s – the large cake will take 25-30 mins to cook, if making muffins, they will take about 15 mins to cook
Step 6
It is cooked when golden brown and firm to the touch on top
