Grown-Up Grilled Cheese w/ Caramelized Onions & Pear

Cooking a grilled cheese sandwich on the Skinny Grill creates a perfectly crisp crust with enticing grill marks. In this adult version of a childhood favorite, we stuff artisanal bread with two cheeses, caramelized onions, and slices of sweet pear.

Instructions

Step 1
Cook In a small frying pan, warm 1 tablespoon of the oil over medium heat. Add the onion and a pinch of salt and cook, stirring occasionally, until the onions are soft and caramelized, 10-15 minutes.

Prep Brush one side of each bread slice with the remaining oil. On a work surface, turn 1 slice of bread oiled-side down. Spread 1 teaspoon of the mustard on the bread, then top with one-fourth of the caramelized onions, and one-fourth each of the fontina, Gruyère, and pear slices. Top with another slice of bread, oiled-side up. Repeat the assembly using the remaining ingredients.
Step 3
Heat Warm the Skinny Grill over medium-high heat. As soon as you see a wisp or two of smoke rising from the surface, the grill is ready to use.
Step 4
Sear Carefully place 2 of the sandwiches on the grill and cook until bread has good grill marks on the first side, 2-3 minutes. Using a metal spatula, flip the sandwiches over and cook until the second side has good grill marks and the cheese is melted, 2-3 minutes more. Repeat with the remaining 2 sandwiches.
Step 5
Assemble Cut each sandwich in half and serve right away.
