Instructions
Step 1
Line your tin with cling film or foil. Put the biscuits in a large metal bowl and crush to crumbs using a rolling pin.
Step 2
Melt the butter, in a plastic bowl in the microwave for 15sec. Repeat until melted.
Step 3
Mix the biscuits thoroughly into the biscuits until the crumbs are completely coated. Tip them into the prepared tin and press firmly down into the base to create an even layer.
Step 4
Chill in the fridge or put to one side.

Make the filling:

Place the soft cheese, icing sugar in a bowl, then beat with electric whisk until smooth. Tip in the cream and continue beating until the mixture is completely combined, about 1 – 3 min.
Step 7
Now spoon the cream mixture onto the biscuit base. Do not try to spread until you have spooned all the mixture in, or it will pick up the crumbs.
Step 8
Smooth the top of the cheesecake down with the back of a dessert spoon or spatula.
Step 9
Decorate if and as you wish. Leave to set in the fridge.
