Caprese Grilled Cheese

Making our Caprese Grilled Cheese (or panini) - is the best thing you could do for yourself today. We use cherry tomatoes that are slightly heated in a pan with some oil, salt and pepper just until they burst. Then we smear some sourdough bread with pesto (you can use homemade or store bought!) and top it with lots of fresh mozzarella. We top the mozzarella with the lightly pan roasted tomatoes, a drizzle of balsamic glaze and press it all together with another slice of pesto spread sourdough. Then we pan fry the sandwich in butter until the bread is nicely toasted and mozzarella is all gooey and melted to perfection! So good!

Instructions
Step 1
1. pesto: Place all ingredients into a food processor and blend until pesto is an even, smooth(ish) texture). Season with salt and pepper.

2. tomatoes: Place a skillet over medium-high heat. Add oil and swirl around the skillet.
Step 3
3. Add tomatoes and sauté until tomatoes begin to burst, 3 to 4 minutes (using the back of a spoon to press the tomatoes to help them ‘burst’ if needed). Season with salt and pepper and toss together.

4. assembly: Spread butter onto both pieces of bread. Flip and top each slice with pesto.

5. Then top one piece of bread with mozzarella, torn and spread into an even layer.
Step 6
6. Drizzle cheese with balsamic glaze and top with an even layer of tomatoes.
Step 7
7. Gently press the remaining slice of bread on top.
Step 8
8. Clean the skillet out and place over medium heat. Add grilled cheese and pan fry for 3 to 4 minutes. Flip and continue to pan fry until both sides have evenly toasted and cheese has melted. Serve.
