Instructions
Step 1
In food processor, process flour, oil, salt and eggs until it looks like cornmeal. While running, slowing add water in a stream until the dough forms a ball. If it is sticky, cut dough into 3 sections and sprinkle in another tablespoon of flour and process again. If dough is crumbly, add another teaspoon of water to from a ball. Wrap dough and let rest in fridge for at least 30 minutes
Step 2
Divide dough into 3 portions. Fold dough into thirds and feed through machine 10 times, refolding each time. Sprinkle with flour if dough is sticky. Set rollers closer to together and feed dough through, repeating until rollers are closest together. May need to cut dough in half. Switch to cutting blades and cut noodles. Hand on wooden rack to dry. Cook as usual.
