Kerezet is an absolutely versatile appetizer. It is appropriate for breakfast, in which case it is served with tomatoes and bell peppers. For dinner, spread it on a piece of rye or whole wheat bread and enjoy it with a glass of beer. Or a good cold white wine.
In his cookbook "Carpatian Cuisine," Sergii Pozhar writes: "Kerezet, an appetizer made with white sheep cheese, is a Transcarpathian dish that is popular not only here [Carpaty region] but also in Hungary, Austria, and Slovakia. This quick-to-prepare, flavorful cheese spread is served as a spread with bread or as a stuffing for sweet bell peppers that are served sliced in rings. It can be made with fresh cow milk, feta, or other fresh sheep's milk cheese. It is interesting to mix two types of cheese. Sometimes sardines, anchovies, capers, lightly salted caviar, and even a little beer are added to the mixture. Every family has a special recipe for Kereset, but each must contain paprika and cumin."
