Dressing
3 tablespoonsrice vinegar
2 tablespoonssugar
1 ½ tablespoonsmirin
1 ½ tablespoonssesame oil
3 clovesgarlic
minced
½ teaspoonsalt

Instructions
Step 1
Cut cucumbers fancy, using 2 chop sticks place parallel on either side of the cucumber. Cut at 90 degree angle, then flip and cut at 45 degree angle. Place in a dish, sprinkle salt evenly and place in fridge for 30 minutes.
Step 2
Make dressing by adding all ingredients and whisking. Set aside
Step 3
Remove cucumbers, rinse salt off and dry. Put in dish that allows the dressing to marinate the cucumbers. Place in refrigerator for 4 hours to 24 hours. (Tastes ok to eat immediately too)
Step 4
When serving just add sesame oil and chili oil. I drizzled some dressing them too. Enjoy
