Seriously Basic Green Salad

As the title states, this salad is seriously basic but these are the kinds of recipes I eat every day. I love making fancy Kelp Noodle Pad Thai and Coconut Flour Pizza but most days I just want a simple salad. I take a minimalist approach to food, and the second I ditched all the fancy condiments and expensive ingredients and just focused on really simple food - it made my food decisions so much easier and allowed me to effortlessly eat well without too much over-complication.

Step 1
In a small jar combine the olive oil, lemon, mustard, salt and pepper and shake to combine.
Step 2
In a large bowl toss the leaves in the dressing, ensuring everything is coated and glossy.
Step 3
Serve topped with half an avocado and hemp seeds and extra salt and pepper to taste.
