Instructions

Step 1
Preheat oven to 450 F and slice cherry tomatoes in half. (this can also work with whole tomatoes).
Step 2
Drizzle some olive oil over the tomatoes and season with salt and pepper. Roast at 450 F for 15-20 min until softened and lightly golden.
Step 3
Combine the tomatoes in a container with shallots, garlic, both vinegars, basil, black pepper, sugar, and olive oil. Use a hand blender to incorporate. Season to taste with salt and adjust ratios if necessary.
Step 4
Serve with a salad, grilled meat, or fish!
