I always use sausage but you can substitute bacon if you prefer. I double the recipe and keep them stocked in our freezer. Put in fridge night before to thaw.
You will also need parchment paper and a few ziploc bags or freezer safe containers.

Step 1
In a large skillet, cook sausage, or bacon, until browned Remove meat and place on a paper towel. Remove all the grease from the pan, but save it for next steps!
Step 2
Add 2 tablespoons of grease back to the skillet, and cook onions, and pepper until soft. Add frozen hash brown and cook until soft. Remove and place into a bowl.
Step 3
Add 1 tablespoon of grease back to the skilled and pour in eggs and cook until done to your liking. Once cooked add eggs to veggies mixture along with the meat.
Step 4
Spoon the filling onto the bottom 1/3 of each tortilla and sprinkle with cheese and roll up the burrito. Serve fresh or freeze for later.
