I'm not a huge breakfast fan, but I could eat these Breakfast Tacos all day! This is a pretty simple taco with lots of different flavors that you will definitely enjoy. Give it a try and let me know what you think!

Step 1
If you need to cook your refried beans start with this. In a medium pot, reheat your refried beans until smooth (about 4-5 minutes).

Next, crack your eggs, each into a small dish. This will all you to keep the yolk intact, while also making sure to look for any pieces of shells.

Heat a skillet on medium heat. Add your butter and coat the pan.

Slowly drop your eggs into the pan. Pro Tip: letting some of the whites hit the pan first will help trap the yolk and prevent them from spreading too much.

Let your eggs cook for 1 minute on medium heat. Then cover, reduce to low and cook for an additional 4-5 minutes, until the whites are cooked.
Step 6
Begin building your tacos by spreading a thin layer of refried beans on the bottom. Then add 2-3 slices of avocado to each taco.

Add 1 fried egg to each taco and hit the eggs with some salt and pepper.
