For the cake

2 cupsall-purpose flour

2 teaspoonsbaking powder

½ teaspoonbaking soda

½ teaspoonsalt

¾ teaspooncinnamon

½ teaspoonground ginger

⅛ teaspoonground cloves

1 stickunsalted butter
softened

1 cuplight brown sugar
packed

1 teaspoonvanilla extract

2eggs
large

1 ½ cupsunsweetened applesauce

½ cupwalnuts
chopped and toasted
For the frosting
Instructions
Step 1
Preheat oven to 350°F. Thickly butter a 9″x9″ pan
Step 2
In a large bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, ginger, and cloves
Step 3
In a separate bowl, with an electric mixer, beat together butter, brown sugar, and vanilla until light and fluffy, about 3 minutes
Step 4
Add the eggs in one at a time, beating in between each addition. Then beat in applesauce
Step 5
Turning the beater to low, pour in dry ingredients until homogenous
Step 6
Last, fold in walnuts. The batter may look curdled, but this is OK
Step 7
Pour batter into pan and bake for 30-40 minutes, until knife come out clean when inserted into the middle. Allow to cool completely before frosting.
For the frosting
Step 8
While the cake is cooking: In a large bowl, with an electric mixer, beat cream cheese, butter, and vanilla until light and fluffy, about 3 minutes
Step 9
In batches of 3, beat in confectioner’s sugar and cinnamon, beating until incorporated
Step 10
Cool frosting in refrigerator for 20-30 minutes. Once cooled, frost cake!
