Avocado Lemon Kale Salad

This delicious kale salad is packed with veggies and tossed in an avocado lemon dressing. It’s a major crowd pleaser and my family, who were all at one point very skeptical of kale, requests that I make it for every gathering or holiday dinner. This salad can be made in under 30 minutes, depending on how fast you are at prepping the ingredients.

Instructions

Step 1
Chop up the kale and add it to a large bowl with the olive oil and massage with your hands until it becomes soft. This is essential as it will take away the bitter taste of raw kale.
Step 2
For the dressing cut up avocados, I usually use 1 to 2 whole avocados depending on the size. Then add in the rest of the dressing ingredients and use an immersion blender until it reaches a smooth consistency. It shouldn’t be too runny or too thick, so you may have to adjust the amount of soy milk added.
Step 3
Add the dressing and veggies to the bowl with the kale and toss until evenly coated

Sometimes I like to refrigerate the salad for a few hours, but you don’t have to
Step 5
When ready to serve, add any toppings that you prefer. I always add candied pecans, everything bagel seasoning, and additional Parmesan cheese.
