Instructions
Step 1
Skin and cut potatoes into similar sized pieces
Step 2
Add to large bowl and cover with water and boil until fork tender (approx. 30 minutes)

Drain potatoes and return to bowl
Step 4
Add butter and mash potatoes, then add bacon, green onions and cheese and mix thoroughly
Step 5
Line 9”x13” pan line with wax paper and add potato mixture until and even 1/2” smooth layer across pan bottom then mash wax paper to top of taters creating an air tight seal on top then add to refrigerator until cold
Step 6
Remove from refrigerator, remove top wax paper and cut into approximately 2 1/2” pucks with cup or biscuit cutter
Step 7
Coat potato pucks in flour then egg wash then panko
Step 8
Heat oil in deep nonstick skillet to 350 degrees
Step 9
Fry until gbd
