Step 1
Keep broth warm on the side
Step 2
Saute onion in some butter
Step 3
Add the rice and stir for a minute
Step 4
Add a splash or two of wine and let it cook off
Step 5
Start adding broth until it barely covers the rice. Let it cook down most of the way before adding a few more ladles. Repeat, stirring regularly
Step 6
When cooked al dente (don't let it get all the way soft), mix parmesan in at the very end
