Pina Colada - Vitamix for Party of Six!

I created this Vitamix cocktail, as a self acclaimed Pina Colada Master, when I bought my Vitamix I wanted a speedy way to entertain with my fave summer drink. Other ways to mix up this recipe include using white or gold rum, adding mango for a tropical flare, or Blue Curacao for a sensational Mermaid Blue Colada.

1Pineapple
Whole Fresh, Peeled and Corred

280gCoconut Cream tin

8 ShotsBacardi

4 ShotsMalibu

Ice
Crushed, or ice cubes

1 ½ cupswater
cold
Optional Garnish
Instructions
Step 1

Select a pineapple that smells delicious so that you know it's ready to go and perfectly ripe. Otherwise I recommend holding off or the drink will be stringy and lack flavour. Peel and core your pineapple and place ingredients in the vitamix.
Step 2

Place some ice cubes in the Vitamix and add the water. This step will ensure it's cold and ready to go, if you have a shortage of ice cubes you can chill the mix in the fridge for 1-2 hours before serving instead.
Step 3

Add the alcohol and the coconut cream to the blender.
Step 4

Use the smoothy setting to blend, or alternatively blend until well mixed.
Step 5
I like to pre-make mine and leave it chilling in the fridge for a few hours however you can also serve as is over a bed of ice cubes.
Step 6
Add crushed ice on top and any other optional garnishes and enjoy! Personally we love the maraschino cherries and some coconut flakes to give it that gourmet twist.
