Instructions

Step 1
Wash and cut the passion fruits in half lengthwise and remove pulp into a blender. Save the clean peels in your freezer to use as sorbet bowls.
Step 2
Pulse the pulp of 10 passion fruits for about a minute, then strain them into a saucepan.
Step 3
Add about a half cup of sugar and boil it for about 5-10 minutes allowing the sugar to dissolve.
Step 4
Add the ice cold water and lemon extract to the pot. Allow it to cool to room temperature.
Step 5
If you have an ice cream maker, place it into it and allow it to churn for about 20 minutes.
Step 6
If you do not have an ice cream maker, place the mix into a freezer safe container. Place it in the freezer for about an hour, remove and mix around with a fork.
Step 7
Keep removing it from the freezer and mixing it up every hour for about 4 hours to maintain a sorbet like texture.
Step 8
Place the mixture into the passion fruit shells and cover with plastic wrap and place them into the freezer.
