Instructions
Step 1
Wash the tenders in lemon juice and distilled vinegar, rinse in water and pat dry with paper towel.
Step 2
In a bowl add the marinade ingredients mix and submerge the tenders into it. Cover and place into a fridge for 1 hour.
Step 3
In a separate bowl mix together the crispy coating ingredients.
Step 4
Time to make the Pornstar martini. In a cocktail shaker or a container that has a watertight lid add the fruit from 2 ripe passion fruits
Step 5
60ml Vanilla vodka 60ml passion
Step 6
2 tbsp lime juice, 2 tbsp sugar syrup, 60ml passion fruit juice or Orange juice and seal the lid then shake vigorously for one minute. Pour the Martini into a saucepan, gently heat until it reduces by a third, add in 10g salted butter gently stir in the butter until it melts. Make a slurry of 1 tsp of cornflour and 2 tsp of water and pour into the saucepan, stir until it thickens then turn off the heat.
Step 7
Retrieve the chicken thighs from the refrigerator and allow them to reach room temperature.
Step 8
One at a time take a tender out of the marinade and coat it in the flour mixture, tap off the excess flour place the tender back into the marinade and then back into the flour and coat, again tap off the excess flour and then lay the coated tender on a plate. Repeat with the remaining tenders.
Step 9
Heat a pan of oil to 165 degrees. Using tongs one by one lower the tenders into the hot oil, and cook until golden brown approximately 4 minutes on both sides. Remove from the pan and drain on a wire rack.
Step 10
Once drained place a few tenders into a bowl pour over a little of the Martini sauce and toss the tenders in the sauce.
Step 11
Plate up, garnish with Passion Fruit seed, sprinkle with a little salt lick you’re lips and enjoy.
