Instructions

Step 1
Set oven to 200
Step 2
Whizz up peppers, chilli, olive oil and salt and pepper in blender to make marinade. Pour over chicken thighs and marinate for 15 minutes
Step 3
Cut potatoes into small sections and fry off in olive oil to get some texture for 10 mins
Step 4
Remove potatoes and add chicken thighs in whole and brown off on both sides
Step 5
Add potatoes back to the pan, lemon juice rosemary and chicken stock
Step 6
Put lid on pot and put in oven on 200 for 30 minutes
Step 7
Add olives to the pot and put back in the oven for another 15 minutes
Step 8
Serve with lots of grated parmesan on top
