Ingredients

¾ cupunsalted butter
¾ cupdutch-process cocoa powder
1 teaspoonvanilla extract
1 ½ cupwhite sugar
packed
3eggs
large
¾ cupall purpose flour
½ teaspoonsalt
½ cupsemisweet chocolate chips
or bittersweet, or chopped chocolate, optional
1 tspespresso powder
1 tsppomegranate molasses
optional
4 tablespoonsbiscuit spread
melted
12lotus biscuits
Instructions
Step 1
line the 8 inch square pan with parchment paper, fill the base with lotus spread then remove and freeze
Step 2
preheat the oven to 180c
Step 3
brown the butter over a low heat
Step 4
once the butter is browned, add in the vanilla, cocoa powder, salt, espresso powder and half the chocolate chips
Step 5
in a separate bowl whisk together the eggs and sugar and molasses until light and fluffy
Step 6
once incorporated, add in the chocolate butter mixture with a spatula
Step 7
add in the flour and mix until just incorporated
Step 8
place half the brownie batter in the pan, add the frozen layer of biscoff then add the remaining half of the batter
Step 9
layer with biscuits in a diagonal biscuit formation
Step 10
bake for 35-40 minutes and let to cool
