Mashed Sweet Potatoes

A very basic sweet potato mash that can be dressed up as much or as little as you want! Add bacon and blue cheese for a savory kick, or satisfy your sweet tooth with the addition of brown sugar and some roasted mini marshmallows!

Step 1
In a large pot, bring salted water to a boil.
Step 2
Wash and peel the sweet potatoes.
Step 3
Chop the sweet potatoes into roughly 1 inch pieces and add to boiling water.
Step 4
Cook potatoes until fork tender and reserve 1/2 cup starchy cooking water. Strain leftover water and transfer potatoes to a large mixing bowl.
Step 5
Add a large pinch of salt, butter, and yogurt (if desired) to potatoes, and mash together until smooth. Add splashes of potato cooking liquid as needed.
Step 6
Serve plain or top with your favorite toppings! For a sweet treat, mix in brown sugar, cover with mini marshmallows, and broil to reveal the golden gooey goodness! (This option is probably best without greek yogurt.)
