Pecan Crusted Chicken

Instructions

Step 1
Adjust rack to middle position and preheat oven to 450° F. Finely chopped pecans or crush.
Step 2
Place 2tbsp butter in a bowl and microwave until melted. Once cooled slightly, stir in pecans, panko, half of the fry seasoning, a drizzle of olive oil, and a pinch of salt and pepper.
Step 3
In a small bowl, combined honey, mustard, and mayonnaise.
Step 4
Pat chicken dry in season with remaining fries seasoning, salt and pepper. Place on a lightly oiled baking sheet and then evenly spread tops of chicken with a thin layer of honey mustard sauce (save the rest for serving). Mound with pecan mixture and press to adhere. Roast on middle rack until crust is golden brown and chicken is cooked through, about 15 to 20 minutes.
Step 5
Meanwhile, halve, core, and thinly slice the apple. And a large bowl, toss the mixed greens and apple with Italian dressing. Season with salt and pepper as desired.
