Instructions

For the Chicken Souvlaki:

Step 1
Prepare the Marinade: In a bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, dried thyme, salt, and pepper.
Step 2
Marinate the Chicken: Place the chicken cubes in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken and toss to coat evenly. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to a few hours.
Step 3
Thread the Chicken: If using wooden skewers, thread the marinated chicken cubes onto the soaked skewers.
Step 4
Cook the Chicken: Preheat a grill or grill pan over medium-high heat. Grill the chicken skewers for about 4-5 minutes per side or until fully cooked and slightly charred. The internal temperature should reach 165°F (74°C).

For the Tzatziki Sauce:

Step 5
Prepare the Tzatziki: In a bowl, combine the Greek yogurt, grated cucumber, minced garlic, fresh lemon juice, chopped dill, salt, and pepper. Mix well.
Step 6
Serve: Serve the grilled chicken souvlaki with pita bread or flatbreads, sliced tomatoes, sliced red onions, sliced cucumbers, and a generous dollop of tzatziki sauce. Garnish with chopped fresh parsley and lemon wedges.
