or wheat flour
1 teaspoonbaking soda

½ teaspoonsalt
2 teaspoonpumpkin pie spice

mashed, ripe, approx three small bananas approximately
½ cupbrown sugar
packed, light or dark
1 teaspoonvanilla extract
5 ozcarrots
shredded
⅓ cupoil
extra virgin olive oil, vegetable oil or canola oil

Preheat oven 375°
Step 4
In food processor, pulse banana and carrot together. Batter should be mostly smooth with some chunks of carrot.
Step 5
Add all remaining EXCEPT flour and pulse until thoroughly combined.
Step 6
Add flour and pulse until thoroughly combined.
Step 7
Line muffin tray with liners and pour batter evenly into 12 muffins (should be about ¾ full).
Step 8
Bake on 375° for 18-22 minutes.
