Instructions
Step 1
Cook rice noodles according to package instructions, drain, and set aside.
Step 2
In a large skillet, heat chili oil over medium-high heat. Add the thawed shrimp and cook until pink and cooked through. Remove and set aside.
Step 3
In the same skillet, add frozen mixed veggies and stir-fry until heated and slightly tender.
Step 4
Add cooked rice noodles, lemon juice, lemon zest, peanut butter, and Moroccan-style seasoning. Stir-fry until well combined.
Step 5
Return cooked shrimp to the skillet and toss everything together.
Step 6
Serve hot, garnished with peanuts in chili oil and fresh bean sprouts.
