Ingredients

1carrot
trimmed, peeled, quartered & sliced in 1/4” pieces
5 ozjasmine rice
2eggs
lg, beaten
3 ozscallions
trimmed, sliced thinly & colors separated
4 ozsnow peas
trimmed & ~sliced
2 tspgarlic
peeled & chopped to yield
1 Tbspginger
peeled, & grated to yield
10 ozshrimp
lg, peeled deveined, rinsed, & patted dry
Tamari-Sesame Sauce
Instructions
Step 1
Mix Tamari- sesame sauce; set aside.
Step 2
In med. saucepan, bring salted water to boil. (As if making pasta.) Add rice & boil (8 min.); add carrots & continue boiling (4 min. longer). Drain & set aside until step 5.
Step 3
While carrot & rice boil, cook egg to soft scramble with a little oil (1 min.) over med.-high; transfer to bowl. Wipe out skillet.
Step 4
Over high, add 1T oil & cook shrimp sprinkled with salt & pepper until just firm; transfer to bowl with eggs.
Step 5
Add peas, ginger, garlic, light/white scallions; cook (1-2 min.) until peas are bright green. Transfer to bowl with shrimp & eggs.
Step 6
Add drained rice & carrots to pan with some oil & Tamari-sesame sauce over high heat. Press down rice to allow to crisp (5 min.), tossing from time to time.
Step 7
Add all items from bowl back into pan with rice; toss until warmed through. Season with salt/pepper.
Step 8
Serve topped with green scallions.
