Panecillos de San Nicolas

Traditional Pampanga San Nicolas Cookies San Nicolas is one of the most loved and popular saints in Pampanga. Almost every town has a sitio or a barangay named after him. Panecillo de San Nicolas is to be stored and in the event of illness or calamities eaten with accompanying prayer which goes: "Grant we beseech thee, Almighty God, that thy Church, which is made illustrious by the glory of the marvels and miracles of blessed Nicholas, thy confessor, may by his merits and intercession enjoy perpetual peace and unity, through Christ, our Lord, Amen." Different moulds are used and by looking at the designs of the Saint's impression on the panecillos, one is given an idea as to where it came from. For example, the harp outline comes from the Lansangan clan of Sta Ana, Pampanga believed to be musicians. The leaf outline comes from the Hizon clans of Mexico and San Fernando, Pampanga known to be vast landowners, and the circular outline comes from the Madrid and Bustos clans of Masantol, Pampanga. Heirloom Panecillo Made from uraru (var. araro, arrowroot) flour, egg yolks, coconut milk, sugar, and vegetable oil these delicacies were named after San Nicolas de Tolentino, patron saint of bakers, children, and the sick whose feast day is celebrated every 10th of September. Considered as one the "oldest cookies in the Philippines" the recipe was brought by the Augustinian Friars to Pampanga during the Spanish Colonial period around 16th century. These small breads were declared by the friars as good deliverance from tempest, floods, famine, fire, pestilence, and other calamities. In 1622, the Holy See gave official concession for the blessing of the Panecillos under the intercession of San Nicolas de Tolentino. Every September 10, parishes devoted to the Saint would bless and hand out these cookies to their devotees after the Holy Mass.

Instructions

Step 1
Combine all ingredients except the flour. Mix until blended well.
Step 2
Add flour and knead dough until smooth.
Step 3
Roll onto a greased San Nicolas Mold and line with wax paper.
Step 4
Trim edges with cookie cutter.
Step 5
Bake at 300 degrees F for 10-12 minutes or until brown.
