Chocolate Cherry Oat Bars - Healthier version

This is a delightful and I think fairly healthy treat. Loaded with oats and fiber, minimized fats and sugars. I like to sub Splenda Brown Sugar to cut the calories a bit. As wonderful as these are day 1, they are even better on day 2+; The vanilla really starts to shine through. Keep them covered though.

Ingredients

¼ cupbutter
room temperature

1 cuplight brown sugar
firmly packed

1 cupapplesauce

¼ cupflax seed

1egg

3 tablespoonsmilk

2 tablespoonsvanilla extract

1 ½ cupsall-purpose flour

¾ teaspoonbaking soda

1 teaspoonscinnamon

¼ tspbaking powder

3 cupsrolled oats

⅓ cupsteel cut oats

½ cupchocolate chips

½ cupdried cherries

¼ cupshredded coconut
Instructions
Step 1
Preheat oven to 350 degrees

Step 2
Beat wet ingredients together into a lightly creamed wet mixture. Ingredients like the flax and applesauce will minimize the ability of the eggs, butter and sugar to fully cream so don't worry about it being perfect.








Step 3
Mix together dry ingredients and hand stir the mix into the wet.





Step 4
Fold in oats, chocolate, cherries and coconut





Step 5
Line 8x12 baking dish with parchment paper and spread mixture out evenly in the dish

Step 6
Bake for 30-35 min
