Instructions

Step 1
saute minced pork in a oil. Once the meat is browned, add the onion. set aside
Step 2
In a stand mixing bowl add 540g white sugar, 750g flour, 7g salt, 150ml oil, 240ml water. Using paddle attachment, mix slowly for 2-3mins.
Step 3
Once the dough has formed. Put in the sauteed minced pork. Slow mix for 2-3mins. Set aside
Step 4
Pastry Margarine/ Inner Dough: - In a separate bowl, combone 150g four and 150g softened butter. Mix by hand (best to use vinyl gloves so it wont stick to your hands). Set aside
Step 5
Hopia Dough: - in a a clean stand mixer bowl, put 600g flour, 70g sugar, 4g salt, 180 ml oil and 310ml water. Using hook attachment, mix it slowly for 3mins
Step 6
Lightly dust working bench, transfer your dough. Flatten the dough by hand and put the pastry margarine. Cover the pastry margarine with your dough. let it rest for 5mins
Step 7
Flatten the dough in a big rectangular shape (be careful in handling the dough so that the pastry margarine wont leak or ooze out of the dough)
Step 8
Roll the dough into a log then stretch the dough horizontally. Then portion the dough to 30-35g each
Step 9
Put filling, 50g each dough (it's easier to assemble if you ball the filling). Seal by pinching the dough then placing it on a lined tray seam side down
Step 10
Egg wash: combine 1 egg and 100ml evaporated milk.
Step 11
Brush dough with egg wash. bake at 240C for 20-25mins
