Double black sesame shokupan is sooo soft and absolutely full of nutty black sesame flavours.

- Black sesame paste is made from 100% black sesame

Showa “Pioneer”, 14% Protein, 0.42% Ash

2.5gDry Yeast
SAF Gold

140gWater

50gheavy cream

12.5gCondensed Milk

20gBlack Sesame Paste

22.5gUnsalted Butter
Filling
Instructions
Black Sesame Filling
Step 1
Thoroughly combine the black sesame paste with powder sugar


Mixing
Step 2

Combine all the dough ingredients, except the butter








Step 3

Mix on low to combined for 7-8 minutes, then develop gluten on high for 10-12 minutes, till smooth (can take up to 30 minutes for the average stand mixer)
Step 4

Add butter, mix on low for 4-5 minutes to incorporate

Step 5

Mix on high for 4-5 minutes to get a smooth final dough
Step 6

Proof for 15-30 minutes (depends on mixing time. Higher mixing time = lower proof time)
Shaping
Step 7

Divide the dough into 5 equal pieces (104g) and ball up, then rest for 15 minutes
Step 8

Roll flat, and spread 30g of sesame filling onto each one
Step 9

Fold both sides in to seal in the fillings, rest for 5 minutes
Step 10

Roll flat again
Step 11

Cut the dough into 3 strips, and braid (entirely optional, you can skip this step)
Step 12

Roll and place in 7.5x7.5x7.5cm Shokupan Tin

Step 13

Proof til 1cm beneath the top, slide in the tin cover
Step 14

Bake at 170c (340f) with fan for 20 minutes
Step 15

Remove from tin and let cool
