Ingredients

2 cupswater
1 cupRaisins
½ cupbutter
room temperature
1 cupsugar
⅔ cupbrown sugar
firmly packed
1 ½ cupcreamy peanut butter
2eggs
large
1 teaspoonvanilla extract
240gall purpose flour
1 cuprolled oats
quick or old-fashioned
2 teaspoonsbaking soda
½ teaspoonsalt
1 x 12 ouncemini semi-sweet chocolate chips
1 cuppeanuts

Instructions
Step 1
Take 1 cup of raisins and place into a pot with 2 cups of water. Bring raisins to a boil then remove from the heat and let them soak for 3 minutes. Once soaked drain water off and pat the raisins dry then set aside to cool.
DOUGH
Step 2
In a mixer, beat butter, sugar, brown sugar, peanut butter, eggs, and vanilla on medium until creamy
Step 3
Meanwhile, stir together flour, oats, baking soda, and salt
Step 4
Gradually add flour mixture to creamed mixture until well blended
Step 5
Fold in chocolate chips, raisins (soaked and drained) and if desired chopped peanuts
Step 6
If you don't want your cookies to spread too much, place dough into the refrigerator for at least 2 hours before baking so it can firm up
BAKING
Step 7
Preheat oven to 350 degrees
Step 8
Drop rounded measuring spoonfuls, or use #40 scoop, about 2 inches apart onto an un-greased baking sheet and press with a fork in a hatch pattern
Step 9
Bake 10 to 12 minutes, rotating the pan(s) in the oven about half way through baking time front to back and upper to lower, until they are golden brown
Step 10
Let cool on baking sheet for 1 minute Remove cookies to wire rack(s) to cool completely
