Ingredients

16 ouncesshrimp
large, peeled and deveined
2 tablespoonsolive oil
2cloves garlic
minced
1 teaspoondried oregano
1juice of lemon
salt
to taste
pepper
to taste

Instructions
Step 1
In a bowl, combine the olive oil, minced garlic, dried oregano, lemon juice, salt, and pepper. This is the marinade for the shrimp.
Step 2
Add the peeled and deveined shrimp to the marinade and toss to coat evenly. Let it marinate for about 10 minutes.
Step 3
Preheat your grill or grill pan to medium-high heat. Grill the marinated shrimp for 2-3 minutes per side until they turn pink and opaque.
Step 4
In a large salad bowl, combine the mixed greens, sliced cucumber, cherry tomatoes, sliced red onion, Kalamata olives, and chopped fresh parsley.
Step 5
Serve the grilled shrimp on top of the salad and garnish with lemon wedges.
