Instructions

Step 1
Make marinade by combining coconut milk, soy sauce, curry powder, tumeric, grated garlic, grated ginger, ground coriander, palm sugar, fish sauce, and oil.

Step 2
Cut chicken into 1-inch chunks and coat with the marinade. Refrigerate for at least an hour, but preferably overnight.

Step 3
If skewering, soak skewers in cold water for an hour to prevent burning. Then skewer marinated chicken.
Step 4
Fire up the grill and cook until lightly charred and cooked. Otherwise you can pan fry them over medium heat for about 4-6 minutes a side.

Peanut Sauce

Step 5
Combine peanut butter, soy sauce, lime juice, sugar, hot sauce, sesame oil, and water until a smooth sauce forms. Serve with chicken satay and enjoy!
